Ingredients :-
1 whole chicken
1/2 cup softened butter
2 whole lemons
4 sprigs fresh rosemary
Salt and pepper
Process :-
Preheat the oven to 400 °F. Line a baking tray with foil.
Zest lemons (do not throw lemons out) and mix in bowl with softened butter. Finely chop leaves from one sprig of rosemary and add to mixture. Add some salt and pepper.
Lay the chicken on the foil-lined baking tray, breast-side up. Use your fingers to smear the butter mixture all over the chicken, under the skin and inside the cavity.
Squeeze the juice of one of the lemons over the chicken, cut the remaining lemon into four and place inside the cavity of the chicken along with the three whole remaining sprigs of rosemary.
Put the chicken in the oven and roast until the skin is a deep golden brown and the juices are sizzling (about an hour and a half – depending on size of chicken).
