1. Eyes

The first and the most important thing about the fish you should notice first is the eyes. Look for bright and clear eyes. The eyes are the window to a truly fresh fish, for they fade quickly into gray dullness. Dull Eyed fish can also be considered and may be safe to eat but they are past their prime.

2. Look at Fish

Look for the fish and check Does It Shine?? Does It look Metallic and Clean?? A good and fresh fish looks clean and shiney.

3. Smell It

The another most important thing is to smell it. A good and fresh fish smells like clean water, or even like cucumbers. It is important for you to smell fish or either cooking won't be good.

4. Gills

A fresh fish have clear rich red colored gills. If color is dull red like a faded brick then the fish may be too old to select.

Another points to be kept in mind.

A. Buy the freshest fish you can find if you are making sushi.

B. Cooking a not-so-fresh fish will not improve it's flavor and/or texture.

C. In land-locked states head to your local Asian or Latin market. Both types of cuisine are known to use lots of seafood, so they will likely have the freshest on hand due to turn over.

D. Flesh should be firm to the touch, not soft or mushy.

F. Select shellfish with shells tightly closed and without any gaps or cracks.

E. Fish should have no brown spots, which are an indication of the beginning of decay.

G. With frozen seafood is must be solid with no signs of partial thawing, in undamaged packaging and with no sign of freezer burn.
